Love and Laziness

I know, I know. 

It's been 2 weeks since my last post!  I apologize, dear readers. 

I do have many excuses, and they all come with good blogging material, so I hope you're ready. 

First of all, blame the boyfriend. 

Ah, young love.  It takes up a lot of time.  The good news is that I have been making a lot of awesome Vegan meals for the boy and I cannot wait to share some of them with you! 

OH and big news...I had my first harvest from the garden! 

I made an awesome Braggs stir fry and quinoa with some fresh, home-grown green beans!  I've also got a BUNCH of cucumbers and zucchinis growing.  Not a literal bunch.  They do not grow in bunches.  But there are a lot of them and I can't wait!

Also, last night we made this VegNews Vegan Macaroni & Cheese

Y'all, I'm not going to beat around the bush. 

It is the best damn macaroni & cheese I have ever had. 

Ever. 

Do not ask me how they do it.  I just want to know how they came up with this recipe.  Seriously, Vegan geniuses.  Like magic.  I'm not over-selling it, am I?  Seriously, this is going to be made again soon and I'm going to blog it.  I want to play around with the recipe slightly, but it is perfection already. 

Yum.

Another excuse I've got for you is that I was out of town last week for our annual family reunion in North Carolina.  I love being able to get up to the Carolinas so much, especially in the Fall.  I really have missed the seasons since I moved back to Florida.

While I was there, though, I brought this Rachel Ray recipe for a Pumpkin Pasta Sauce over to the Vegan side.  Again, this was amazing.  Delicious.  I can't wait to make it again and share it with you.  I also made a spinach garlic butter to spread on Italian bread slices...you heard me.  Yum.

AND I have actually been keeping busy with my photography, which is good news.  I have a lot of editing to do but I'm looking forward to sharing some of these photographs with you. 

So, all good things and I promise a lot of posts this week and in the next month as I count down the last month of the first half of my twenties.  (I'm about to turn 26.)  I have big plans for this countdown so keep an eye out.
